Cranberries are a favorite at holiday meals and most everyone loves them. Unlike fruitcake – which you either love or you hate – most folks will enjoy a spoonful or two with their turkey. But did you know there is more than one way to enjoy that tart, sweet turkey-loving fruit? This version of Zesty Cranberry Orange Relish is rockin’! And to think … back in the 1980’s, before I knew much at all about cooking, I stopped at the local grocer and asked (just out curiosity) the produce department guy, “Is it possible to buy fresh cranberries?” Of course, he looked at me like I was an idiot, and just pointed over my shoulder. I spun around on my heels and saw this huge pile … of yes, FRESH CRANBERRIES. Unbeknownst to me, there really was such a thing … without the can. Whodda thunk?
I picked up a bag, turned it over it, and on the package I saw the most ridiculously simple recipe I had EVER seen. It said, “Pour berries in a pan. Add a cup of water & a cup of sugar and bring it to a boil. Reduce heat and simmer 5-7 minutes until all the berries pop open. Remove from heat. Chill overnight” That was IT! Really …? Ever since I discovered how easy it was to make my own and make it WAY better, I never served that canned stuff again. YUCK!
BUT THEN . . . in the years that have passed, I played with that back-of-the-bag recipe. I added different things until I found the one perfect combination that my family & I loved the best — Zesty Cranberry Orange Relish. “Canned jellied cranberry sauce” is no longer even in my vocabulary.
- 1 - 12 oz. bag of fresh cranberries
- 1/2 c water
- 1/2 c orange juice
- 1 cup sugar
- 1 T orange zest
- 1/2 t fresh ground cinnamon
- 1/4 c finely grated walnuts (optional)
- In a saucepan, add cranberries, water, orange juice, and sugar.
- Bring to a boil. Reduce heat to a slow simmer.
- Add orange zest, cinnamon. Stir and simmer 5-6 minutes until all berries pop. Remove from heat.
- Let cool 20-30 minutes,
- Place in a covered glass dish and chill overnight.
- Just before serving, mix in the walnuts, if desired.
Yep. That is all there is to whipping up a batch of Zesty Cranberry Orange Relish. Could it possibly be any easier?
